INGREDIENTS:
Shepherds Pie
  • celery, cut up, bite-sized pieces - 1/2 cup
  • red pepper, bite-sized pieces- 1/2 cup
  • peas - 1/2 cup
  • yellow onion, cut up and diced - 1/2 cup
  • grass fed ground beef -  3/4  lb
  • tomato paste - 6 oz
  • Worcestershire sauce - 1 tbsp
  • dried basil - 1 tbsp
Topping
  • cauliflower - 2 cups of chopped, cooked cauliflower (about 1 small head)
  • 1 tbsp olive oil
  • milk - 1/2 cup milk
  • Parmesan cheese - 1/3 cup Parmesan cheese

INSTRUCTIONS:

Preheat oven to 350 F.

First, cook ground beef and then set aside. Then, heat a large frying pan on medium or medium-high. Add in all the vegetables (celery, red pepper,  peas and yellow onion) and cook until done. Leave in pan and set aside.

In separate mixing bowl add tomato paste, Worcestershire sauce, dried basil and stir

Put beef, vegetables and tomato past mixture together and stir well.  Then, scoop all the contents into a 9 x 9 baking dish.

For the topping, blend cooked cauliflower, with milk, cheese. Cover veggie/meat mixture with the cauliflower mixture and then put in oven and cook for 30 minutes.
