Ingredients

Noodle Bowl

  • 2 Cups Cooked Rice Noodles (about 6 oz. uncooked)
  • 8 Large Shrimp
  • 1/2 Large Red Pepper - diced
  • 1/2 Cucumber - diced
  • 1/2 Cup Fresh Mint
  • 1/2 Cup Fresh Basil
  • 2 Cups Lettuce - chopped
  • 2 Tblsp. Chopped Peanuts or Cashews
  • 2 Tblsp. Rice Vinegar
  • 1 Tblsp. plus 1 Tsp Sesame Oil
  • 1/4 Cup Braggs Liquid Aminos or Soy Sauce

Dressing

  • 1 Tsp. Crushed Red Pepper Flakes
  • 1 tsp. Ginger - minced
  • 1/4 Cup Rice Vinegar
  • 1 Tblsp. Fish Sauce
  •  2 Tblsp. Honey

Directions

Put lettuce, red peppers, cucumbers around the outside of a large plate. Stir 1 Tblsp sesame oil, rice vinegar and liquid aminos into cooked, warm  rice noodles (cook according to package). Put noodles in the center of the plate. Stir fry shrimp in 1 Ttp sesame oil for 3 minutes or until cooked through (don't overcook will become rubbery). Put cooked shrimp, mint, basil and chopped nuts on top of noodles.

For dressing, mix all ingredients together until well blended. Pour dressing over noodles and lettuce.
