Ingredients:
Salad
- 5 ounces spring greens mix (or any greens of your choice)
- half of an English cucumber, very thinly sliced
- half of a small red onion, peeled and very thinly sliced
- 1/2 cup pepitas or toasted nuts of your preference
Dressing
- 3 tablespoons olive oil
- 1 tablespoon lemon juice OR red wine vinegar
- 1 teaspoon Dijon mustard
- 1 small clove garlic, minced (or 1/2 teaspoon garlic powder)
- salt and pepper to taste
Instructions:
Mix all dressing ingredients together and whisk until blended. Mix all salad ingredients in a bowl and top with dressing.
