• 5 ounces spring greens mix (or any greens of your choice)
  • half of an English cucumber, very thinly sliced
  • half of a small red onion, peeled and very thinly sliced
  • 1/2 cup pepitas or toasted nuts of your preference


  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice OR red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 small clove garlic, minced (or 1/2 teaspoon garlic powder)
  • salt and pepper to taste


Mix all dressing ingredients together and whisk until blended. Mix all salad ingredients in a bowl and top with dressing.
