• 1/4 Cup Chicken Broth
  • 1 Medium Onion Diced
  • 3 Cloves Garlic, Minced
  • 1 Red Pepper, Diced
  • 3 Stalks of Celery, Diced
  • 1 Cup Diced Tomatoes 
  • 1 Cup Uncooked Quinoa
  • 2.5 Cups Chicken Broth or Water or Combination
  • 2 tsp Chili Powder
  • 1 tsp Cumin


Heat 1/4 cup chicken broth in a large pan. Add onions, garlic, peppers and celery,. Cook over medium heat until vegetables soften about 5 minutes.  Add tomaotes and quinoa and cook and stir for 3 minutes. Add broth or water and  chili powder and cumin. Bring to a boil, then reduce heat to low, cover, and simmer until the quinoa is tender, and the liquid is absorbed, about 30 minutes. Stir the quinoa occasionally as it cooks.
