Ingredients:
- 1 lb grass fed ground beef
- 1 can corn (drained)
- 1 can black beans (drained)
- 1 tsp + 1/2 tsp cumin
- 2/3 + 1/2 cup salsa
- 1/2 cup crumbled Mexican cheese, feta or goat
- 1/3 cup broth
- 1/2 cup plain Green yogurt
- 4 Peppers
Directions:
Preheat oven to 350. Cut tops off peppers and clean the inside. Cook meat on stove. Add corn, beens, 1 tsp cumin, 2/3 cup salsa and cheese. Stir well.
Stuff peppers with beef mixture (save remaining meat mixture for recipe below). Put in oven safe pan. Add broth to bottom of pan. Cook for 30 minutes. Mix together 1/2 cup yogurt and 1/2 cup salsa and 1/2 tsp cumin. Stir and put on top of peppers
Optional:
With remaining meat mixture you can make chili by adding 1 large can diced tomatoes. You can make an omelette or scrambled Mexican eggs by adding 4 eggs and cooking.
