This tasty and hearty soup is part of our 3-day menu plan. This menu plan is designed to allow you to make the most out of your food and meal prep. For this particular dish,we are assuming that you already have completed some of our 3-day menu plan prep work.
Here is the prep-work that is relevant for this stuffed pepper:
  • cook 1/2 lb ground Italian sausage or ground beef. You will only use a portion of this for the recipe below.
INGREDIENTS:
  • 1/2 cup ground beef, cooked
  • 1/2 cup quinoa
  • 1/3 cup peas
  • 2 tblsp salsa
INSTRUCTIONS:

Preheat your oven to 375F. Take your red pepper and cut off the top. Mix together your cooked ground beef, quinoa, peas and salsa, and then put that mixture into your pepper. Cook for about 25 minutes. You can serve with some optional avocado or greek yogurt and enjoy!
