• 1 lb ground beef
  • 1 egg
  • 1/2 cup panko bread crumbs
  • 1/2 can coconut milk
  • 1 tbs curry paste


Mix beef, egg, and bread crumbs. Roll into balls to form meatballs. In a pan over medium heat, cook the coconut milk and curry paste to create the sauce. Place the meatballs on a prepared cookie sheet and cook at 350° until no longer pink inside, about 20 minutes. Then broil on high for another 5-10 minutes for a deliciously crispy crust. Add the meatballs to the sauce and stir to coat the meatballs. Serve.
