Ingredients:

  • 2 large tomatoes (I love the Heirlooms)
  • 1/8 cup diced red onion
  • 3 oz fresh mozzarella - chopped
  • 1/4 cup fresh basil
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste

Directions:

Cut tomatoes into thick slices (approximately 4 slices/tomato). Place on platter. Cover tomatoes with onions, mozzarella, basil. Drizzle with vinegar and oil. Add salt and pepper to taste
