2 large tomatoes (I love the Heirlooms)

1/8 cup diced red onion

3 oz fresh mozzarella - chopped

1/4 cup fresh basil

2 tbsp balsamic vinegar

2 tbsp olive oil

Salt and pepper to taste



Cut tomatoes into thick slices (approx 4 slices/tomato). Place on platter. Cover tomatoes with onions, mozzarella, basil. Drizzle with vinegar and oil. Add salt and pepper to taste
