• 1/2 lb lean ground turkey
  • 1/2 cup onion, diced
  • 1 cup sweet potato, peeled and diced into chunks
  • 1 1/2 cup kale or spinach
  • 1/8 cup crumbled goat cheese
  • salt and pepper to taste
  • parsley (optional)


  1. Heat pan on stovetop and add ground turkey and diced onion. Brown meat, breaking up until cooked through
  2. Add the sweet potatoes and cover. Cook until tender, about 15 minutes
  3. Add kale (or spinach) and cook until wilted
  4. Add the goat cheese
  5. Garnish with parsley, if desired
