• 3/4 Cup Coconut Oil - melted
  • 10 Dates, Pitted and Stems Removed
  • 1 Banana - Ripe (slightly brown) is best
  • 2/3 Cup Peanut or Almond Butter
  • 1/2 Cup Shredded Unsweetened Shredded Coconut
  • 2/3 cup organic oats
  • 1/4 Cup Chia Seeds


Put banana, dates and melted coconut oil in blender or food processor. Blend until almost smooth. Pour into a large bowl, add remaining ingredients and stir. Press mixture into a 9" square baking pan and refrigerate for at least 2 hours. Cut into 1" square pieces and serve. You can wrap into single servings and freeze for later enjoyment. Can be a bit crumbly so you might want a plate or napkin when you eat them!
