• 1 lb. grass fed lean ground beef
  • 3 cups chicken broth or bone broth
  • 1 28 ounce can crushed tomatoes
  • 5 cups diced vegetables of your choice (I used onion, zucchini, carrots, celery)
  • 2 cups packed dark greens (I sued baby kale and spinach)
  • 1 tsp smoked paprika
  • 1 tsp dried tarragon
  • Juice of 1/2 lemon
Cook beef in a pan. Add remaining ingredients and cook until vegetables are soft. I like to serve with crumbled feta on top.
