Ingredients
1 lb. grass fed lean ground beef
3 cups chicken broth or bone broth
1 28 ounce can crushed tomatoes
5 cups diced vegetables of your choice (I used onion, zucchini, carrots, celery)
2 cups packed dark greens (I sued baby kale and spinach)
1 tsp smoked paprika
1 tsp dried tarragon
Juice of 1/2 lemon
Directions:
Cook beef in a pan. Add remaining ingredients and cook until vegetables are soft. I like to serve with crumbled feta on top.
