Ingredients:
- 1 lb. grass fed lean ground beef
- 3 cups chicken broth or bone broth
- 1 28 ounce can crushed tomatoes
- 5 cups diced vegetables of your choice (I used onion, zucchini, carrots, celery)
- 2 cups packed dark greens (I sued baby kale and spinach)
- 1 tsp smoked paprika
- 1 tsp dried tarragon
- Juice of 1/2 lemon
Directions:
Cook beef in a pan. Add remaining ingredients and cook until vegetables are soft. I like to serve with crumbled feta on top.
