• 2 eggs
• ½ cup diced zucchini or mushrooms (small pieces)
• ½ cup diced red peppers (small pieces)
• ½ cup diced broccoli (small pieces)
• 1 tsp oil
In small saucepan add oil and spread around bottom of pan. Add vegetables and cook until soft. In bowl beat eggs. Pour over vegetables. Stir. Cook covered over low heat until eggs are set.
