When I made these this morning, I said to my  husband, "I could eat these everyday for the rest of my life!!" OK, maybe a slight exaggeration but that's how good they were. What I love about this recipe is you can use almost any vegetable!! So if you have some vegetables in your fridge that you need to use, here is your recipe!!

The other great thing about this recipe is it's awesome for breakfast. Can be served with a slice of turkey on top for lunch or as a side dish for dinner!!

Ingredients:

  • 2 Cups of  chopped zucchini (can use yellow squash, carrots, broccoli..)
  • 2 Eggs
  • 1 Tblsp Olive Oil
  • 4 Thick Slices of Tomatoes
  • (Salt and pepper to taste)

 

Directions:

Put zucchini, eggs, salt and pepper  in a blender until almost smooth.  Put 1 tsp oil in a pan over med. heat. Add sliced tomatoes and cover. Cook for 3 minutes. Remove from pan and set aside. Add remaining oil and spoon zucchini mixture into pan to form 4 pancakes. Cover pan and cook for about 5 min. Flip and cook an additional 2-3 minutes. Remove pancakes and put on plate. Top each one with a tomato slice.

 

Serves 2: Makes about four 4" pancakes.
