*For this recipe, you can really sub in any number of veggies that you might have on hand!


  • 2 Tablespoons broth (vegetable or chicken)
  • 1 cup of packed spinach
  • 1/2 cup sliced mushrooms
  • 1/2 cup diced tomatoes
  • 1 egg


Pour broth in a small frying pan and add spinach, mushrooms and tomatoes. Cook over medium heat stirring often. Crack egg and gently pour on top of vegetables. Cover pan with a lid. Cook for approximately 4 min. or until egg is cooked.
