Vegetable Cake Recipe:
- 1 Cup Grated Vegetable Of Your Choice (zucchini or carrots are my fave)
- 1 Cup Packed Power Greens (spinach, kale...)
- 2 Eggs
- 1 Tbsp Ground Flax Seed (optional)
- 1 Tbsp Olive Oil
Put chopped zucchini (about 1/2 large) into a food processor / blender. Blend until small pieces. Add eggs and power greens (option to add 1 tbsp flax seed). Blend until almost smooth. Heat a pan with oil. Add a scoop of mixture to form small cakes. Cook covered over medium heat for 4 minutes. Flip and cook uncovered for 3 minutes. Eat as it is or sprinkle with salt, pepper and dill and then too with plain yogurt and salsa.
