Ingredients:

  • 1 cup old fashion oats
  • 1 cup almonds (or other nut)
  • 1 Cup low-fat plain yogurt (use diary-free if needed)
  • 1 Cup Milk (skim, 1%, 2% almond… any kind will work)
  • 1 tsp vanilla
  • 2 eggs beaten
  • 2 Tbsp Honey or Pure Maple Syrup
  • 1 Tsp Baking Soda
  • 1 Tsp Baking Powder
  • 1-2 Tbsp Coconut Oil

Directions:

Combine oats and nuts in a blender and pulse until almost smooth. Put oat mixture into a large bowl and stir in yogurt, milk and vanilla and let stand overnight in the fridge. The next day, add in remaining ingredients. If batter is too thick add a bit more milk. Mix all ingredients together. Add a small amount of coconut oil to large pan. Once it is melted add batter and make pancakes. Great with apple sauce or warmed berries.

Makes about 10 pancakes
