2 egg

2 cups chopped zucchini (1 medium size)

salt and pepper to taste

2 tsp oil

1 tomato

1 tbsp fresh basil (can use 1/2 tsp dried basil)


Crack egg into a blender. Add zucchini and salt and pepper. Blend until almost smooth. Heat 1 tsp oil in an oven-safe skillet over medium heat. Pour 1/2 of zucchini batter into pan, cover with lid, and cook for 5 min.

Turn oven on broil. Remove the lid from the pan and place pan under broiler and cook for 3 minutes or until set.

Dice 1 tomato into small pieces and add chopped basil. Top the zucchini cake with the tomatoes and basil. An even quicker option is to top the zucchini cake with pre-made salsa!

Save other 1/2 of zucchini batter covered in fridge. When ready to use shake well before pouring into the pan.
