Ingredients:

1 Cup thinly sliced zucchini

1/3 cup cooked ground beef (grassfed is best) or chorizo

1 egg

2 tsp avocado oil

Directions:

Heat oil in a pan. Add single lawyer of zucchini and cook over medium heat for 4 minutes. Flip zucchini over and sprinkle cooked ground beef on top. Add 1 egg. Cover and cook over low heat until egg is set (about 5 min).

Optional: Top with diced avocado and salsa
