Ingredients
- 1 - 4 oz chicken breast (boneless, skinless)
- ½ cup tomato puree
- ¼ tsp dried basil
- ¼ tsp dried oregano
- â…› tsp crushed red pepper
- 2 tbsp fresh basil (chopped (optional))
- 1 slice mozzarella cheese ((optional if you want to make it a chicken parmesan dish))
Instructions
- Preheat oven to 375º
- Fill a medium size pot halfway with water. Heat water on high heat until water is simmering.
- Add chicken breasts and turn water to medium. Cover pot and cook chicken breasts for approx. 20 minutes of just cooked throughout. (I like to cook the chicken in water because it keeps the chicken moist).
- Place chicken breasts in a baking dish.
- In a bowl mix together tomato puree, basil, oregano and red pepper.
- Pour red sauce over chicken. Â
- Bake the chicken in the red sauce for about 10-15 minutes to warm everything through, then, if using cheese, place it on top and bake for an additional 5 minutes or until melted.
- Sprinkle basil over chicken and serve.
