Ingredients 

  • â…“ cup butternut squash (roasted)
  • ¼ cup oats
  • 1 egg
  • â…“ tsp cinnamon
  • â…“ tsp vanilla
  • ¼ tsp baking powder
  • â…› tsp nutmeg
  • 2 tbsp cottage cheese
  • 1 tbsp oil
  • ½ apple (optional)
  • 1 tbsp apple cider (optional)
  • 1 tbsp pecans (optional)

Instructions 

  • In a bowl, combine butternut squash, cottage cheese, oats, egg, cinnamon, vanilla, baking powder, and nutmeg. Stir until smooth.
  • Heat a skillet with oil. Pour small portions of batter onto the skillet and cook for 2-3 minutes per side, until golden brown.
  • Top with pecans and cooked apples if you'd like!
