Ingredients 

  • ½ tomato (Heirlooms are a great option)
  • 1 ½ tsp red onion (diced)
  • 1 ½ tbsp mozzarella (fresh, cubed)
  • 1 tbsp basil (fresh)
  • 1 ½ tsp balsamic vinegar
  • 1 ½ tsp olive oil
  • salt and pepper (to taste)

Instructions 

  • Cut tomatoes into thick slices (approximately 4 slices/tomato).
  • Place the tomatoes on a platter. Cover tomatoes with onions, mozzarella, and basil.
  • Drizzle with vinegar and oil. Add salt and pepper to taste and serve.
