Ingredients
- 1 - 4 oz chicken breast
- 2 ¼ tsp olive oil (divided use)
- ¾ tsp flour
- ⅜ cup diced tomatoes
- ⅜ cup chicken broth (low sodium is best (can substitute vegetable broth))
- ¼ cup artichoke hearts (drained and quartered)
- 4 tsp parsley
- â…› of lemon juice (freshly squeezed)
- ¾ clove garlic (optional)
- 1 tbsp capers
Instructions
Chicken
- Thinly slice your chicken (or ask your butcher to do it for you)
- Heat 3/4 tsp olive oil in frying pan over medium heat. Add the chicken and cook for about 5 minutes on each side or until chicken is cooked through
Sauce
- Put flour into a separate pan
- Add 1 1/2 tsp olive oil
- Turn stove on to medium-low heat and mix the flour and oil
- Once flour has dissolved, add the diced tomatoes, chicken broth and artichoke
- Mix together
- Add parsley, lemon juice, garlic (optional) and capers
- Cook for about 15 minutes
- Place chicken on top of some brown rice, pour sauce over chicken and add fresh parsley to the top of the dish!
