Chicken Breast with Tomatoes and Artichoke

A tender chicken breast is accompanied by juicy tomatoes and tender artichoke hearts, creating a harmonious blend of savory flavors.

Ingredients 

  • 1 - 4 oz chicken breast
  • 2 ¼ tsp olive oil (divided use)
  • ¾ tsp flour
  • â…œ cup diced tomatoes
  • â…œ cup chicken broth (low sodium is best (can substitute vegetable broth))
  • ¼ cup artichoke hearts (drained and quartered)
  • 4 tsp parsley
  • â…› of lemon juice (freshly squeezed)
  • ¾ clove garlic (optional)
  • 1 tbsp capers

Instructions 

Chicken

  • Thinly slice your chicken (or ask your butcher to do it for you)
  • Heat 3/4 tsp olive oil in frying pan over medium heat. Add the chicken and cook for about 5 minutes on each side or until chicken is cooked through

Sauce

  • Put flour into a separate pan
  • Add 1 1/2 tsp olive oil
  • Turn stove on to medium-low heat and mix the flour and oil
  • Once flour has dissolved, add the diced tomatoes, chicken broth and artichoke
  • Mix together
  • Add parsley, lemon juice, garlic (optional) and capers
  • Cook for about 15 minutes
  • Place chicken on top of some brown rice, pour sauce over chicken and add fresh parsley to the top of the dish!
