Ingredients
- 2 slices bacon (uncured/no nitrate; cooked and crumbled)
- 1 green onions (sliced)
- 1 cups potatoes (diced; I recommend golden potatoes)
- â…“ cup celery (sliced)
- â…” cloves garlic (minced)
- 6 oz clams (in juice, undrained, chopped)
- â…“ cup vegetable broth
- ¼ tsp white pepper
- â…™ tsp dried thyme
- â…“ tsp salt
- â…” cups almond milk (unsweetened)
- â…™ cup fresh parsley
Instructions
- Add bacon, green onions, potatoes, celery, garlic, clams, broth, white pepper, thyme, salt and the juice to a large pot. Cover and simmer over med/low heat for 20 minutes or until potatoes are just just soft.
- Add milk and cook additional 5 minutes until hot. Pour into bowls and top with parsley.
