Ingredients
Base
- 1 date
- 1 tsp coconut oil
- 2 tbsp almond flour
- 2 tsp peanut butter (natural, no sugar added)
- â…“ tsp vanilla
- ½ tsp maple syrup
Topping
- 1 tbsp dark chocolate chips (use dairy-free if needed)
- â…“ tsp peanut butter (natural, no sugar added)
- â…™ tsp coconut oil
- â…™ tsp vanilla
Instructions
- Cover dates with 2 tbsp hot water. Let sit for 10 min.
- Put dates and coconut oil in a blender and blend.
- Put blended dates in a bowl. Add flour, peanut butter, vanilla, and syrup and stir.
- Press base into the bottom of a prepared baking dish.
- Topping: In double boiler (pot over a pot with boiling water) add chocolate chips, peanut butter, coconut oil and vanilla. Stir over the boiling water until melted.
- Pour topping mixture over the base and let set until firm before serving. Placing it in the refrigerator will speed this up.
