Fish With Chorizo, Sun-dried Tomatoes and Mashed Peas

This is a fun way to jazz up fish and will not disappoint!

Ingredients 

  • â…“ cup peas (if frozen, thaw)
  • 1 tbsp olive oil
  • 4 oz red snapper (can substitute your favorite fish)
  • 1 ½ oz chorizo
  • 1 tbsp sun-dried tomatoes (diced)

Instructions 

  • Cook chorizo in a pan over a medium-high pan and let oils release from chorizo.
  • Remove chorizo and then lay fish in the pan and cook for about 4 min (cook time depends on the type of fish and thickness), flip, and cook on the other side for about 3 min. or until fish is cooked through.
  • In a small blender, add 1 cup of peas and olive oil. Blend until almost smooth. Add salt and pepper to taste.
  • Place fish on a plate and top with blended peas. Sprinkle chorizo and sun-dried tomatoes.
