Ingredients 

Salad

  • 1 cup romaine lettuce (chopped)
  • ¼ cucumber
  • ¼ red bell pepper (thinly sliced)
  • 2 tbsp grape tomatoes
  • 2 tbsp kalamata olives (pitted)
  • 1 tbsp feta cheese (crumbled)
  • 2 tbsp artichoke heart (chopped)
  • 1 pepperoncini (whole)

Dressing

  • ¼ tsp lemon juice (freshly squeezed)
  • 1 tbsp balsamic vinegar
  • â…” clove garlic (peeled and minced)
  • â…™ tsp dried oregano
  • 1 ½ tbsp olive oil
  • 1 tbsp feta cheese (crumbled)
  • salt and pepper (to taste)

Instructions 

  • Blend lemon juice, vinegar, garlic, oregano, oil, feta, and pepper to make dressing.
  • Place the remaining salad ingredients in a bowl and dress to taste.
