Salad
- 1 cup romaine lettuce (chopped)
- ¼ cucumber
- ¼ red bell pepper (thinly sliced)
- 2 tbsp grape tomatoes
- 2 tbsp kalamata olives (pitted)
- 1 tbsp feta cheese (crumbled)
- 2 tbsp artichoke heart (chopped)
- 1 pepperoncini (whole)
Dressing
- ¼ tsp lemon juice (freshly squeezed)
- 1 tbsp balsamic vinegar
- â…” clove garlic (peeled and minced)
- â…™ tsp dried oregano
- 1 ½ tbsp olive oil
- 1 tbsp feta cheese (crumbled)
- salt and pepper (to taste)
Instructions
- Blend lemon juice, vinegar, garlic, oregano, oil, feta, and pepper to make dressing.
- Place the remaining salad ingredients in a bowl and dress to taste.
