This sweet-hot peach salsa is a lovely way to compliment chicken.

Ingredients
- 1 ½ peach (peeled and diced)
- ¼ jalapeño pepper (seeded and minced)
- 1 ½ tsp red onion (finely chopped)
- â…› cup fresh cilantro (chopped)
- ¼ cup red bell pepper (chopped, can substitute grape tomatoes)
- 1 lime (freshly squeezed)
- salt and pepper (to taste)
- 1 chicken breasts (skinless)
- ½ tsp olive oil
- ½ lime juiced
- 1 tsp ancho chili powder
Instructions
- Simply mix the first seven ingredients together, and allow the mixture to sit at room temperature for 30 minutes to let the flavors combine.
- Meanwhile, preheat a grill to medium-high heat. Grill the chicken until it reaches an internal temperature of 165.
- Mix the lime juice and the olive oil together and brush onto the chicken breasts. Season each breast evenly with salt, pepper, and ancho chili powder.
- Top the chicken with the peach salsa to serve! Enjoy!
