Who doesn't love a hash brown? Try these made with spaghetti squash for a healthier version.

Ingredients
- ¼ spaghetti squash (cooked and strands pulled out from squash)
- 1 pinch sea salt
- 2 ¼ tsp coconut oil
- 1 tsp green onion (optional garnish)
- 1 tsp cilantro (optional garnish)
- 1 tbsp yogurt (no sugar added, optional garnish)
Instructions
- Mix squash with a pinch of sea salt.
- Compact the squash in your hands to form a "hash brown-like" patty. Use a kitchen towel or paper towel to help squeeze out any extra moisture from each patty.
- Heat a skillet up to medium heat, and add coconut oil. When oil is hot, gently add a couple of patties to the pan.
- Pan-fry each side of the patties for about 5 to 7 minutes, or until golden brown and thoroughly heated all the way through.
- Top with optional garnish if you like and enjoy.
