Ingredients 

  • 4 oz shrimp
  • ½ cup kale
  • ¼ cup brown rice (cook according to package)
  • ½ tbsp olive oil
  • 1 clove garlic (minced)
  • salt & pepper (to tast)

Instructions 

  • Heat olive oil in a pan. Add garlic and shrimp, cooking until pink (about 3-4 minutes).
  • Remove shrimp and sauté kale in the same pan for 2-3 minutes.
  • Serve over brown rice.
