Ingredients 

  • ½ cup tomato puree
  • ½ cup corn (organic preferred)
  • ½ cup gluten-free bread crumbs
  • 1 egg
  • ¼ cup onions (finely chopped )
  • ½ tsp ground black pepper
  • ¾ pounds lean ground beef (can substitute ground chicken)

Instructions 

  • Preheat oven to 350°.
  • Mix all ingredients together in a large bowl.
  • Shape meatloaf into a baking pan and cook uncovered for 45 minutes or until cooked through.

Makes 2-3 servings.

  1. Suggestion related to printing recipes: If one is attempting to save paper and prints without the picture, the name of the recipe does not print. Would be very helpful if the recipe name was separate from the picture.
