Ingredients
- ¼ lb pork loin (sliced 1/2" thick)
- 1 ½ tsp olive oil (can substitute grape seed oil)
- ¼ lemon (fresh squeezed)
- 2 tbsp white wine
- 2 tbsp chicken broth (if you are avoiding gluten make sure it's gluten-free)
- 1 ⅛ tsp corn starch
- 1 ½ tsp capers
- ½ cup tomatillos (diced, optional)
- 4 tsp green onions (sliced thin)
Instructions
- Heat oil in a large pan and add a single layer of sliced pork. Cook over medium-high heat for 4 min. and flip.
- Add onions and tomatillos and cook 4 more minutes uncovered.
- In a bowl, mix lemon juice, wine, broth and cornstarch. Pour liquid into a pan and stir.
- Add capers and continue cooking for an additional 4 minutes or until pork is cooked through and the sauce is thickened. Serve.
Notes
Great with white beans and sautéed snap peas.

My family loved it! Tangy, bright flavor. Served it with peas because snap peas were suggested and steamed rice.
