Thin pork chops topped with a quick pan sauce make a tasty and fast dinner for busy nights.

Ingredients 

  • ¼ lb pork loin (sliced 1/2" thick)
  • 1 ½ tsp olive oil (can substitute grape seed oil)
  • ¼ lemon (fresh squeezed)
  • 2 tbsp white wine
  • 2 tbsp chicken broth (if you are avoiding gluten make sure it's gluten-free)
  • 1 ⅛ tsp corn starch
  • 1 ½ tsp capers
  • ½ cup tomatillos (diced, optional)
  • 4 tsp green onions (sliced thin)

Instructions 

  • Heat oil in a large pan and add a single layer of sliced pork. Cook over medium-high heat for 4 min. and flip.
  • Add onions and tomatillos and cook 4 more minutes uncovered.
  • In a bowl, mix lemon juice, wine, broth and cornstarch. Pour liquid into a pan and stir.
  • Add capers and continue cooking for an additional 4 minutes or until pork is cooked through and the sauce is thickened. Serve.

Notes

Great with white beans and sautéed snap peas.
