Ingredients
- 1 ½ tsp olive oil
- â…™ lb pork (cooked, diced; can substitute chicken)
- ¼ cup onion (chopped)
- ½ cup mushrooms (sliced)
- ½ cup zucchini (sliced)
- ½ tsp Worcestershire sauce
- ¾ tbsp flour (may add more for thicker sauce)
- ½ cup milk
- 2 tbsp sour cream (reg, oat, cashew)
- 1 tbsp plain Greek yogurt
- ¼ cup cooked rice (cooked according to package; can substitute quinoa or pasta)
- salt and pepper (to taste)
Instructions
- Put oil in a large skillet over medium heat. Add onion, zucchini and mushrooms and cook for 5 minutes.
- Add flour to the skillet, stir slowly.
- Add milk, stirring until sauce begins to thicken.
- Add salt, pepper, Worcestershire sauce, sour cream and yogurt. Stir, and heat through.
- Serve over quinoa, rice or pasta if desired, and enjoy!
