These pancakes are already so delicious there is no need for syrup. Apples, bananas, or cinnamon would be a fun addition, however!

Ingredients
- ¼ cup pumpkin puree (no sugar added)
- 1 egg
- 2 tsp butter
- ½ tsp baking powder
- ¼ tsp cinnamon
- 1 tsp maple syrup (can substitute honey)
- ¼ tsp vanilla
Instructions
- Blend all ingredients, except butter, together, and use as the pancake batter!
- Melt the butter in a pan over medium heat.
- Once the pan is hot, pour the batter in the pan, cover and cook the pancakes for 3 min. Flip them and cook uncovered.
