Pumpkin Pancakes

These pancakes are already so delicious there is no need for syrup. Apples, bananas, or cinnamon would be a fun addition, however!

Ingredients 

  • ¼ cup pumpkin puree (no sugar added)
  • 1 egg
  • 2 tsp butter
  • ½ tsp baking powder
  • ¼ tsp cinnamon
  • 1 tsp maple syrup (can substitute honey)
  • ¼ tsp vanilla

Instructions 

  • Blend all ingredients, except butter, together, and use as the pancake batter!
  • Melt the butter in a pan over medium heat.
  • Once the pan is hot, pour the batter in the pan, cover and cook the pancakes for 3 min. Flip them and cook uncovered.
