Ingredients
- ¼ cup vegetable broth (can substitute chicken broth)
- 1 ½ tsp ginger (grated)
- 1 garlic clove (minced)
- â…“ yellow onion (thinly sliced)
- â…“ red pepper (thinly sliced)
- â…” cup broccoli (chopped into bite-sized pieces)
- â…” cup shrimp (raw, peeled )
- â…” tbsp sesame oil
- 4 tsp soy sauce (can substitute Bragg Liquid Aminos)
- 2 tsp sesame oil
- 1 egg (beaten)
- 1 â…“ cups brown rice (cooked, organic is preferred)
Instructions
- In a medium size pot pour vegetable/chicken broth and cook over medium heat.
- Add garlic and ginger and cook for 3 minutes.
- Add onion, pepper, and broccoli and simmer until vegetables are slightly soft.
- Add shrimp to pot and simmer an additional 5 minutes. Stir
- Stir in soy sauce.
- In a separate large pan add sesame oil. Once pan and oil are hot add eggs and stir slowly until eggs are set.
- Add the brown rice and stir.
- Add vegetables and broth to rice and stir completely.
- If you want to spice it up, add some hot sauce! If you prefer to sweeten it up, add some diced pineapple.
