Ingredients
- 2 â…” ounces brown rice noodles (usually found in the Asian section of the store)
- 2 tsp coconut oil
- â…“ pound medium shrimp (peeled and deveined)
- ¼ cup snow peas (trimmed)
- 1 â…“ scallions (thinly sliced)
- â…” cloves garlic (chopped)
- 4 tsp oyster sauce (found in the Asian section of the store)
- 2 tsp rice vinegar
- 1 tsp soy sauce (Bragg Liquid Aminos is a great option for gluten free)
- crushed red pepper (for serving)
Instructions
- Cook Noodles according to package.
- Heat oil in a large pan over high heat. Add shrimp, snow peas, scallions and garlic. Stir while cooking. Cook for about 3 minutes.
- Add oyster sauce, vinegar, and soy sauce. Stir.
- Add the noodles and stir.
- Serve and sprinkle with crushed red pepper.
