Ingredients
Noodle Bowl
- 1 cup rice noodles (cooked)
- 4 large shrimp
- ¼ red pepper (large, diced)
- ¼ cucumber (diced)
- ¼ cup fresh mint
- ¼ cup fresh basil
- 1 cup lettuce (chopped)
- 1 tbsp cashews (chopped (can substitute peanuts))
- 1 tbsp rice vinegar
- 1 ½ tsp sesame oil
- â…› cup soy sauce (can substitute Bragg Amino Acid for gluten-free option)
Dressing
- ½ tsp red pepper flakes
- ½ tsp ginger (minced)
- â…› cup rice vinegar
- ½ tbsp fish sauce
- 1 tbsp honey
Instructions
- Put lettuce, diced red peppers, and diced cucumbers around the outside of a bowl/plate.
- Mix half of the sesame oil, rice vinegar, and soy sauce together and then mix into the cooked, warm rice noodles (cooked according to the package).
- Put the seasoned noodles in the center of the bowl/plate.
- Stir-fry shrimp in a pan over medium-high heat using the other half of the sesame oil for 3 minutes or until cooked through (don't overcook will become rubbery).
- Place cooked shrimp, mint, basil, and chopped nuts on top of the noodles.
- For dressing, mix the last 5 ingredients together until well blended. Pour dressing over noodles and lettuce. Enjoy!
