Simple Dinner – Sausage and Peppers

This is a simple go-to meal packed with protein, veggies, and great flavors.

Ingredients 

  • ¼ lb turkey sausage (sliced into bite size pieces (elk sausage is a good substitute))
  • ¼ red pepper (diced)
  • ¼ yellow pepper (diced)
  • ¼ large onion (diced)
  • ¾ tsp dried oregano
  • 2 tbsp water
  • salt and freshly ground black pepper (to taste)

Instructions 

  • Put water in a large pan and add sausage.
  • Place diced onions and peppers on top of sausage.
  • Cover and cook over medium heat for approx 20 min. Check 1/2 way through cooking process to see if you need to add more water (water should just cover the bottom of the pan).
  • Remove lid and add oregano and ground pepper and stir. Cook additional 5 min.
  • Drain excess liquid and serve warm.
