Ingredients
Salad
- 1 ½ cups spring greens mix (or any greens of your choice)
- â…› English cucumber (very thinly sliced)
- â…› red onion (peeled and very thinly sliced)
- 2 tbsp pepitas (can substitute any toasted nuts of choice)
Dressing
- 2 ¼ tsp olive oil
- ¾ tsp lemon juice (can substitute red wine vinegar)
- ¼ tsp Dijon mustard
- ¼ clove garlic (minced (or 1/2 teaspoon garlic powder))
- salt and pepper (to taste)
Instructions
- Mix all dressing ingredients - oil, lemon juice, mustard, garlic, and salt and pepper together and whisk until blended.
- Mix all salad ingredients in a bowl and top with dressing.
