Ingredients 

  • ½ red pepper (large )
  • 1 small chicken breast (cooked and cubed)
  • ½ tbsp sun-dried tomatoes (minced)
  • 1 tbsp fresh basil (chopped)
  • 1 slice mozzarella cheese (thin)

Instructions 

  • Preheat over to 375°.
  • Place the red pepper half in the oven, open side up, and cook until just soft.
  • Place chicken and sun-dried tomatoes inside the pepper half.
  • Top with a slice of cheese and bake for 10 min or until the cheese melts and the chicken is warm.
  • Remove from oven and top with fresh basil and serve.
