Ingredients
- ½ red pepper (large )
- 1 small chicken breast (cooked and cubed)
- ½ tbsp sun-dried tomatoes (minced)
- 1 tbsp fresh basil (chopped)
- 1 slice mozzarella cheese (thin)
Instructions
- Preheat over to 375°.
- Place the red pepper half in the oven, open side up, and cook until just soft.
- Place chicken and sun-dried tomatoes inside the pepper half.
- Top with a slice of cheese and bake for 10 min or until the cheese melts and the chicken is warm.
- Remove from oven and top with fresh basil and serve.
