Ingredients 

Salad

  • ¼ cup quinoa (cooked according to package directions; can substitute farro)
  • 1 cup spinach (fresh, baby)
  • 4 grape tomatoes (halved)
  • 3 tbsp chickpeas (canned, rinsed and drained)
  • 1 tsp parsley (fresh, chopped)
  • 1 tsp green onion (chopped)
  • 1" slice avocado

Dressing

  • 2 tsps olive oil
  • ½ tsp lemon juice
  • 1 pinch garlic powder
  • hot pepper sauce (to taste)
  • salt and pepper (to taste)

Instructions 

  • In a large bowl, toss spinach and warm quinoa, allowing the spinach to wilt slightly. Add tomatoes, chickpeas, parsley and green onions.
  • Whisk together dressing ingredients. Toss with salad.
