Ingredients
- 1 cup chicken broth (can substitute vegetable broth )
- 1 cup spinach (can substitute power greens)
- ¼ cup carrots (grated or shaved)
- 4 cheese tortellini
- ¼ tsp parmesan cheese (grated)
Instructions
- Add broth to a pot and bring to a simmer over medium heat. Add carrots and spinach and cook for 3 minutes. Add tortellini to simmering broth and cook until soft, about 5 min.
- Pour into a bowl and top with parmesan cheese.
