Ingredients
- ½ sweet potato (baked, with skin on)
- 1 cup kale (packed, rib removed)
- 3 eggs (beaten together)
- 1 ½ tbsp goat cheese
- 1 tbsp olive oil
- salt and pepper (to taste)
Instructions
- Crack eggs into a medium-sized bowl and mix with a whisk or a fork.
- Coat the bottom and sides of a baking pan with 1 tbsp olive oil.
- Take your sweet potato (already baked) and take the skin off.  Cut your sweet potato into bite-size chunks and sauté in a pan with 1 tbsp olive oil for about 5 minutes. Add the kale and cook until it is wilted. Â
- Put the sweet potato and kale in your prepared baking pan. Pour eggs over sweet potatoes and kale. Add crumbled goat cheese over the egg mixture.
- Bake in a preheated 375º for 15 minutes, let cool for 10 minutes, and then enjoy!
Notes
Makes 2 servings. You can add some cooked quinoa into the mixture right before you put it in the oven for added protein
