This moist and flavorful loaf is made with pureed sweet potatoes, warm spices like cinnamon and nutmeg, and a hint of honey and raisins. It is an ideal treat for breakfast or dessert.

Ingredients
- 1 ½ cups sweet potato (cooked until soft and do not use the peel)
- 2 eggs
- 1 tbs orange juice (concentrate)
- ¼ cup coconut oil (melted)
- ¼ cup coconut flour
- ¼ cup almond flour
- 1 tbs xanthan gum
- 1 tsp baking soda
- ¼ cup raisins (can substitute dried cranberries)
- 1 tbs raw honey (optional)
- 1 tsp cinnamon
- 1 tsp nutmeg
- coconut oil (to be used for preparing pan)
Instructions
- Preheat oven to 350ºF.
- Put the first 4 Â ingredients into a blender, blend until smooth, and pour into a large bowl.
- Add remaining ingredients and stir well.
- Use coconut oil to grease your loaf pan.
- Place mixture into 1 large loaf pan or 2 small ones. Bake for 30-40 minutes or until the middle is set and a toothpick inserted into the center comes out clean. Enjoy!

Makes one loaf - serving = 1/8 of the loaf.Â

The bread had a great flavor, however mine took MUCH longer than 25 min. to bake. More like 1 + hour. It did make for a lovely dessert. Thank you.
