Sweet Potato Bread

This moist and flavorful loaf is made with pureed sweet potatoes, warm spices like cinnamon and nutmeg, and a hint of honey and raisins. It is an ideal treat for breakfast or dessert.

Ingredients 

  • 1 ½ cups sweet potato (cooked until soft and do not use the peel)
  • 2 eggs
  • 1 tbs orange juice (concentrate)
  • ¼ cup coconut oil (melted)
  • ¼ cup coconut flour
  • ¼ cup almond flour
  • 1 tbs xanthan gum
  • 1 tsp baking soda
  • ¼ cup raisins (can substitute dried cranberries)
  • 1 tbs raw honey (optional)
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • coconut oil (to be used for preparing pan)

Instructions 

  • Preheat oven to 350ºF.
  • Put the first 4  ingredients into a blender, blend until smooth, and pour into a large bowl.
  • Add remaining ingredients and stir well.
  • Use coconut oil to grease your loaf pan.
  • Place mixture into 1 large loaf pan or 2 small ones. Bake for 30-40 minutes or until the middle is set and a toothpick inserted into the center comes out clean. Enjoy!

Notes

Makes one loaf - serving = 1/8 of the loaf.
