Ingredients
- ½ sweet potato
- 1 cup black beans (drained and rinsed)
- ¼ cup green chiles (diced and drained)
- 1 green onion (thinly sliced)
- ½ tsp ground cumin
- ½ tsp chili powder
- 1 tsp oil
- ½ avocado
- cilantro
- salt and pepper (to taste)
Instructions
- Heat oil in pan at medium high.
- Mix all ingredients together and form sweet potato mixture into patties.
- Place the patty in heated pan. Cook for about 4 minutes on each side - until golden brown.
- Carefully place on plate and top with avocado and cilantro
