Succulent shrimp are marinated in a flavorful blend of soy sauce, garlic, and ginger. This dish is not only delicious but also nutritious, as it's packed with protein and low in calories. Serve it over a bed of brown rice or on its own. Add some roasted veggies for a wholesome and satisfying meal that's ready in minutes.

Ingredients 

  • ¼ lb shrimp (medium sized, peeled and deveined)
  • 1 tbsp vegetable broth (chicken broth can be used as a substitute - low-sodium, organic is ideal)
  • ½ clove garlic (minced)
  • 1 ½ tsp ginger (minced)
  • 1 tbsp lemon juice (fresh)
  • 1 ½ tsp soy sauce (use Braggs Liquid Amino Acid as substitute for gluten-free)
  • 1 tbsp orange juice
  • â…› tsp red pepper flakes
  • â…› cup fresh basil (chopped)

Instructions 

  • Put broth in a pan and cook over high heat until it reaches a low boil.
  • Turn heat to medium and add all ingredients EXCEPT the shrimp and basil. Cook over medium heat for 5 mins.
  • Add shrimp and basil and cook for another 4 mins. or until shrimp are just cooked.
  • Pour over brown rice or enjoy on its own.
