Ingredients 

  • 1 slice whole wheat bread (or pita)
  • 1 tsp dijon mustard
  • 1 oz brie cheese
  • 1 tomato (sliced)
  • ½ cup arugula

Instructions 

  • Lightly toast bread.
  • Spread mustard over bread.
  • Add arugula on bread and top with tomato and then brie.
  • Broil on low until cheese is melted.
