Ingredients
- ½ cup vegetable broth (organic, low-sodium is best (can substitute chicken broth))
- ¼ cup onion (chopped)
- ¼ cup chopped celery
- 1 cup tomatoes (diced, canned)
- ¼ cup yogurt (can substitute non-dairy, unsweetened milk)
- salt and pepper to taste
- 1 tbsp fresh basil (sliced)
Instructions
- Put broth, onion, celery, and tomatoes in a pan and bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Put tomato mixture in a blender and blend until smooth and pour back in pot. Â
- Add yogurt or milk, salt and pepper.
- Serve warm soup in a bowl and top with basil.
