This homemade tomato soup is sure to warm your heart and soul!

Ingredients 

  • ½ cup vegetable broth (organic, low-sodium is best (can substitute chicken broth))
  • ¼ cup onion (chopped)
  • ¼ cup chopped celery
  • 1 cup tomatoes (diced, canned)
  • ¼ cup yogurt (can substitute non-dairy, unsweetened milk)
  • salt and pepper to taste
  • 1 tbsp fresh basil (sliced)

Instructions 

  • Put broth, onion, celery, and tomatoes in a pan and bring to a boil.
  • Reduce heat and simmer for 30 minutes.
  • Put tomato mixture in a blender and blend until smooth and pour back in pot.  
  • Add yogurt or milk, salt and pepper.
  • Serve warm soup in a bowl and top with basil.
