Ingredients
- ¼ lb Italian sausage (ground, spicy)
- ½ clove garlic
- ½ large potato (sliced in bite-size pieces)
- 8 oz chicken broth (or vegetable - organic if possible)
- 1 cup kale (chopped)
- ¼ cup milk (reg or oat is best)
- salt and pepper (to taste)
Instructions
- Put sausage and garlic in a pot and completely cook the sausage.
- Add sliced potatoes and chicken broth into pot and cook over medium heat for 15 min. or until potatoes are slightly soft.
- Add chopped kale and milk to the pot. Cover and cook until kale is wilted. I can make a meal out of this soup!!

Another delicious, simple to make meal! Next time I’ll make sure to use mild sausage….I had hot! So….I added sauerkraut to mine. Yum!
