Ingredients
- 1 tsp oil (grapeseed or avocado are ideal)
- â…™ fennel bulb (diced)
- â…™ medium onion
- ½ clove garlic
- â…™ tsp crushed red pepper (more or less to taste)
- â…” cup chicken broth
- â…“ lb chicken sausage (Italian is preferred, chopped)
- ½ cup white beans (drained)
- fennel greens (optional)
- salt and pepper (to taste)
Instructions
- Use a non-stick pan or cast iron skillet to cook chicken sausage until done. Set aside.
- Add oil to a large pot and heat on the stovetop over medium heat. Add fennel, onion, and garlic. Stir then cover and cook for 5 min.
- Add broth and red pepper and cook for 15 min. Add sausage and beans and cook additional 10 min. Add salt and pepper to taste.
- Serve in bowls and top with minced fennel greens (optional).
