Shrimp and Green Bean Stir Fry
This quick and flavorful shrimp and green bean stir-fry comes together in minutes with fresh garlic, crisp-tender green beans, and a savory sauce that's perfect anytime!
Ingredients

1 tbsp avocado oil
- or sesame oil

1 cloves garlic
- minced

1/4 pound shrimp
- shelled and deveined

1/4 lb green beans
- stems removed and diced into bite-sized pieces

2 tbsp chicken stock

1 1/2 tsp fish sauce
- optional - but really good

salt and pepper to taste
- a little extra pepper is best
Instructions
- Heat the avocado or sesame oil in a large wok or skillet over medium-high heat until shimmering.
- Add the garlic and cook for about 10 seconds, stirring constantly until fragrant.
- Add the shrimp and green beans. Stir-fry for 2–3 minutes, tossing frequently.
- Pour in the chicken stock and fish sauce (if using). Continue cooking for another 3–4 minutes, or until the green beans are tender-crisp and the shrimp are pink and cooked through.
- Season with salt and plenty of freshly ground black pepper to taste.
- Serve immediately on its own or over brown rice or cauliflower rice.
